White Eggs, Brown Eggs, Blue Eggs: What Shell Colour Really Means

On the supermarket shelf, many people judge an egg by its shell, without considering what actually lies behind its colour.

Are white eggs “industrial”, while brown eggs are “free-range and healthy”? This belief has spread through kitchen conversations, social media and even market stalls. Yet food science tells a very different - and far more interesting - story about what determines shell colour.

Shell colour: the hen is the real reason

The most obvious distinction is plain to see: one shell is white and the other is brown, sometimes beige. However, the explanation has nothing to do with chemicals, hormone injections or tricks used by the industry.

Shell colour is determined mainly by the breed of hen, not by the quality of the egg.

In broad terms, hens with white feathers usually lay white-shelled eggs. Birds with dark, reddish or brown feathers are more likely to produce brown eggs. This is down to genetics: as the egg forms, the bird’s body deposits natural pigments onto the shell.

The pigment is made in the hen’s oviduct during the final stage of egg formation. For brown eggs, the relevant compounds are called protoporphyrins, which are also linked to feather colour. If a breed does not produce these pigments, the egg will have a white shell.

Are brown eggs healthier than white eggs?

This question comes up year after year. The technical answer is straightforward: when hens are kept under similar conditions, white and brown eggs have a very similar nutritional composition.

Protein, fat, vitamins and minerals are influenced far more by a hen’s diet and rearing conditions than by shell colour. If two birds receive the same feed, have access to the same type of environment and are subject to the same health controls, the eggs they produce will be virtually identical on the plate.

What changes an egg’s nutritional value is what the hen eats and how it lives, not the colour you see on the carton.

Some producers supplement hens’ feed with sources of omega-3, vitamins or particular minerals. In these cases, the label will usually state “egg enriched with omega-3” or use similar wording. Such enrichment can alter the nutritional profile, but it makes no difference whether the egg is white or brown: the hen’s diet remains the key factor.

Why do so many people insist that brown eggs taste better?

The impression of flavour and quality is also shaped by expectations. Brown eggs are strongly associated in the popular imagination with “happy” hens, back gardens, smallholdings and free-range production. White eggs, meanwhile, have acquired a reputation for being “industrialised” and removed from nature.

When people believe a food is more natural, they are inclined to perceive more flavour, even where there is no genuine difference in composition. In blind tests, where participants cannot see the shell before tasting the egg, their ability to tell them apart by flavour drops sharply.

Where do the rare blue-tinted eggs come from?

Every so often, a photograph of a blue, greenish or very pale egg circulates and causes surprise. Are these eggs dangerous? No, provided that they are fresh and stored properly.

In some parts of Chile, a breed of hen called the Araucana naturally lays bluish eggs. Their colour comes from another compound, oocyanin, which is deposited throughout the shell, from the inside to the surface. They stand out because of their appearance, but they are neither more dangerous nor miraculous.

  • White eggs: more common in intensive systems, depending on the country;
  • Brown eggs: frequently found in markets that value a “free-range look”;
  • Blue-tinted eggs: associated with specific breeds, with low output and limited availability.

Because Araucana hens lay fewer eggs than other breeds, their eggs tend to be expensive and uncommon. In many shops, they are hardly ever seen on the shelves.

Diet, stress and the hen’s health also have an effect

Although breed establishes the basic shell colour, the environment can make small differences. A bird’s health, stress levels and nutrition may affect the intensity of the colour and even the strength of the shell.

Hens that are poorly fed, ill or under constant threat from predators may lay eggs with thinner, marked or less even shells.

This applies to both white and brown eggs. A farm that carefully manages feed quality, avoids overcrowding and reduces stress in its birds is more likely to produce eggs with more uniform, consistent shells.

Yolk colour is unrelated to shell colour

Another point is often confused: a deeply coloured yolk does not result from a brown shell. Yolk colour depends chiefly on pigments in the hen’s diet, such as carotenoids found in maize, green leaves and some vegetables.

How to choose eggs more safely

In practice, consumers have far more useful criteria than shell colour when deciding which eggs to take home. The following points can help:

  • Check the best-before date and packing date, where available;
  • Make sure the shells are clean, free from cracks and without any unusual smell;
  • Read the carton for information about the production system, such as free-range, cage-free or conventional;
  • Store eggs somewhere cool, preferably in the fridge, with the pointed end facing downwards.

At home, a simple test can help assess freshness: place the egg in a glass of water. If it sinks and lies flat, it is likely to be very fresh. If it stands upright or floats, it is older and deserves extra care before being eaten.

Common misconceptions and what truly deserves attention

Many claims have circulated suggesting that white eggs contain more “poison” or more chemicals. This association is not supported by food safety legislation or composition data. Animal products, whether white or brown, can only reach shop shelves after meeting inspections and strict quality rules.

The real risk is more closely connected to poor storage, a lack of refrigeration in very hot conditions, cracked shells and contamination through handling. Without hygiene and proper controls, these factors can encourage the presence of bacteria such as Salmonella.

From a practical perspective, a careful shopper is likely to benefit from focusing on:

  • Farm conditions and animal-welfare standards stated on the packaging;
  • The transport and display of eggs in the shop, away from direct sunlight and excessive heat;
  • Kitchen precautions, such as thoroughly cooking eggs for more vulnerable groups, including older people and pregnant women.

White, brown, blue eggs: what really reaches the plate

If someone cooks two eggs from similar origins, one white and one brown, in the same frying pan with the same oil, any perceived difference will not come from shell colour. It will come from freshness, cooking time and personal preferences.

Consider this scenario: a white-feathered hen is kept free-range and fed maize, vegetable-garden scraps and balanced feed. It lays a white egg. Beside it, a brown hen lives in a cramped cage and receives feed of questionable quality, laying a brown-shelled egg. If the consumer chooses only by the brown colour, they may end up taking home the egg from the poorer source while believing they have made “the best choice”.

For anyone seeking to improve their diet, looking only at the shell is not enough. It makes more sense to check the origin, the inspection mark and the type of rearing declared on the packaging. That way, colour becomes merely an aesthetic detail, while the decision is based on factors that genuinely affect health and the way animals are treated.
